Butternut is rich in beta-carotene, which lowers the chances of developing asthma and colon cancer. Higher levels of beta-carotene and vitamin C, together, boost the immune function. Its high fibre content helps prevent constipation and promotes a healthy digestive tract.

Also known as butternut pumpkin, ‘Batana’ is a type of winter squash usually of yellow skin, you can identify the sweeter, richer ones by their deep orange colour.

Creamy butternut soup is a delightful starter. Get started by heating the oil in a pot over medium heat. Add the onion, ? teaspoon salt, and ? teaspoon pepper and cook, stirring occasionally. Cook for 6 to 8 minutes or until tender. Add the broth, butternut pieces and 1 cup water and bring to a boil. Reduce heat and simmer for 15 minutes until the squash is tender. Working in batches, puree in a blender until smooth. Stir in the lime juice and serve.
