Ladies’ fingers pods are one of the richest sources of mucilage substance that help in smooth peristalsis of digested food through the gut and ease constipation. They also possess healthy amounts of vitamin A and flavonoid anti-oxidants such as beta-carotene, xanthin and lutein, all of which are known to have antioxidant properties and are essential for vision. The vitamin A is also required for maintaining healthy mucus membranes and skin. The flavonoids also help protect you from lung and oral cavity cancers.

Ladies’ fingers are given priority due to their healthy, edible seeds pods.

Add more taste and nutrients to your meal by adding a dish of Okra Fry. You’ll need 100g Ladies’ Fingers, 1 teaspoon red chilli powder, 1 tablespoon rice flour, 2 tablespoons oil, 1 tablespoon mustard, 2 red chillies, curry leaves, a chopped onion, chopped coriander leaves and salt. Cut the ladies’ fingers into small rounds. Put oil in a pan and heat, adding mustard when hot enough. When it starts to pop, add red chillies and curry leaves. Then throw in the chopped onion and coriander leaves and fry for few seconds. Add the ladies’ fingers pieces and stir fry until half-cooked. Add red chilli powder and salt. Stir fry for a few more minutes. Sprinkle the rice flour in bits and mix it well. Allow to fry till it becomes dry and crisp. And, voila!
