This is super-filling, easy to make, and perfect for brunch, lunch, or dinner, too!
INGREDIENTS
- 10-12 Eggs
- 5 Cloves Garlic
- 1 Large Red Onion
- Handful Kale
- Handful Snow Peas
- Two handfuls Spinach
- 400 grams Mushrooms
- 3 Tbs Coconut Oil
- 2 Cups Cherry Tomatoes
- 2 Cups Feta Cheese
- One Large Avocado
- Herbs – Thyme / Chives Salt / Pepper / Chili to taste
DIRECTIONS
- In a mixing bowl, whisk Eggs and Season with Salt, Pepper and Spices
- Chop Red Onion
- Finely Chop Garlic
- Slice Mushrooms
- Halve Cherry Tomatoes
- String Snow Peas
- Slice Avocado
- Sauté Mushrooms in a little Coconut Oil and set aside.
- Fry Onions and Garlic and set aside
- Add more Coconut Oil and fry Kale and set aside
- Add another Tbs of Coconut Oil and Scramble Eggs
- When Eggs are slightly under-done, add the Mushrooms, Onions/Garlic mix, Spinach, Snow Peas and Cherry Tomatoes and fold in
- Serve onto a large platter! Add Kale on the sides, Top with Herbs. Decorate with the Avocado and top with extra Cherry Tomatoes
