A Savory Chutney with a Sweet & Spicy Element to it.
INGREDIENTS
- 12 Lemons
- 2 Tbs Salt
- 200 ml Lemon Juice
- 400 grams Chopped Dates
- 8 Cloves Garlic
- 200 ml Apple Cider Vinegar
- 2 Tbs Fresh Ginger
- 2 Tsp Cardamom Powder
- 2 Tsp Coriander Powder
- 2 Tbs Ginger Powder or Fresh Ginger
- 1 Tsp Paprika
- 1 Tsp Chili Flakes
- 400 grams Raw Honey Stick Cinnamon
METHOD
- Mix Chopped Lemons with Juice and Salt
- Mix all other ingredients [except for the Honey and Dates], into the Lemon mix
- Put it into a large pot and mix thoroughly
- Bring to the boil and simmer for 5 minutes
- Then add sweeteners – chopped dates and Honey
- Simmer gently for about 50 minutes
- Keep stirring to avoid the mixture burning or sticking to the bottom of the pan
- Pour into sterilized jars and Store in a cool dry place for at least 7 weeks before eating
