Pastry
- 3 Cups of flour
- 1 Tsp Baking Powder
- 1 Tsp Himalayan Salt
- 100g Butter
- 1 Cup Coconut Yoghurt
- Iced Water as necessary
Filling
- 1 Large Leek
- 1 Medium head Broccoli
- 1/2 Tsp Salt
- 3 TBS Coconut Oil
- 450g Mushrooms
- 1 Cup Feta cheese
- A handful of herbs
- 1 Cup Coconut Yoghurt
- 1/4 Tsp Pepper / 1/4 Tsp Chili Powder
- 4 Eggs beaten
Method
- Mix flour, Salt, Banking Powder
- Add Butter and press with fingertips till it resembles a coarse crumble
- Add yoghurt and mix with hands to form a dough
- Wrap and chill in the fridge for 30 minutes
- Roll out on baking paper and roll into a circle
- Press pastry into baking dish and neaten edges
- Line pastry with baking paper, add some dried beans & bake for 20 minutes
- Slice leeks & chop broccoli
- Add coconut oil into pan & sauté vegetables, set aside when done
- Add more oil & sauté mushrooms and set aside
- Whisk eggs – Add salt, pepper & spices
- Crumble feta to this mixture
- Add sauteed vegetables
- Add the mixture to the tart case
- Bake 200C till egg is cooked and tart is golden colour
