Magic Bean Cake

Let’s start baking this Magic Bean Cake

INGREDIENTS
  • 425 g Cooked red kidney beans
  • 5 eggs
  • 1/2 Cup Honey
  • 1/3 Cup Raw Cacao
  • 1/3 Cup Coconut Oil
  • 1/2 Tsp Bicarb Soda
  • 1 Tsp Baking Powder / 1/2 Tsp Cinnamon Powder
  • 1 Tbs Coffee
  • 1 Tbs Vanilla Extract
  • 1/4 Tsp Pink Himalayan Salt

     

Optional Toppings – Cashew, Berries, Bananas, Cacao Nibs
METHOD
  • Preheat oven to 180 Celsius
  • Combine kidney beans, coffee, vanilla, coconut oil, eggs, and salt in a blender
  • Then add the rest of the ingredients and blend to combine well
  • Line a cake tin with baking paper or use a cupcake tray
  • Pour mixture in, add toppings if you wish, and bake for 25-30 minutes until it’s springy to the touch

     

Avocado Frosting
  • 2 Ripe Avocado
  • 1/3 Cup Cacao
  • 1/3 Cup Raw Honey
  • 1/2 Tsp Vanilla Direction Mix all ingredients well
  • Chill for 15 minutes.
