Homemade Cream of Mushroom Soup is full-flavoured and so easy to make, you won’t buy soup in a can!
INGREDIENTS
- 4 Tbs Coconut Oil
- 1 Large Onion chopped
- 4 Cups Mushrooms Sliced
- 3 Cups Vegetable Broth
- 3 Cloves Garlic chopped
- 1 Tbs Soy Sauce or Tamari
- 2 Cups Coconut Milk
- 1/2 Cup Coconut Cream
- 3 Tbs Cornflour
- 2 Tsps Lemon Juice
- 1 Tsp Sea Salt
- For Garnish- Herbs like Thyme, Oregano, Basil, Parsley, Garlic Chives
DIRECTIONS
- Heat Pan and sauté Onions. Add Garlic. Fry till golden in colour. Add Mushrooms and sauté for 5 minutes
- Stir in Tamari. Add Salt. Reduce heat, cover pan and simmer for 15 minutes
- In a separate bowl whisk coconut milk and Corn flour
- Pour into the soup and stir thoroughly to blend. The soup will thicken very quickly
- Simmer for a few more minutes, while stirring
- Season with Pepper, stir in Lemon Juice
- Serve on a bed of cooked brown or red Rice and sprinkle herbs and a dollop of coconut cream on top
