If you’re a fan of Chinese fried noodles, you must try today’s recipe for Singapore Mei Fun, a hearty all-in-one dish full of goodness and great flavors.
INGREDIENTS
- 4 Cups Cooked Rice Vermicelli
- 1 Large Carrot
- 1 small head of Broccoli
- 1 large Leek
- 1 Red Capsicum
- 1/2 small Red Cabbage
- A few cloves of Garlic
- An inch of Fresh Ginger
- 1 Red Chili
- 2 Tbs Coconut Oil
- 5 Tbs Organic Teriyaki Sauce
- 1 Tbs Raw Honey
- 1 heaped Tsp Roasted Curry Powder
- 1 Tsp Turmeric Salt and Pepper
- 1/2 Cup Crushed Peanuts
METHOD :
- Finely Chop all Vegetables
- In a large wok, Fry Garlic and Ginger in Coconut Oil
- Next, add all vegetables and half the Leeks
- Stir Fry well
- Add the Cooked Rice Vermicelli
- Add Spices to taste
- Turn off the stove – add the rest of the Leeks, and red chilies, and sprinkle crushed peanuts on top
